The other day I was on my way to work and decided to grab an apple out of my fruit bowl on the kitchen counter. I got to work and realized I grabbed my apple-shaped kitchen timer instead.

Souper Easy Veggie Stew

I love making soups and stews. The formula is simple: chop a variety of veggies, whatever you have, a food combo that sounds good to you and are in the mood for, simmer it all in a broth of your choosing until the veggies are cooked to your liking.

Friday night I made an 8-quart pot of vegetable soup. I always make a batch that big. No, I don't have an army of children. Yes, I have a roommate, but he doesn't eat vegetables.

I froze about half of it in serving-size containers. I've been sharing the rest.

Easy Vegetable Stew

I started by making four quarts of delicious Rapunzel vegetable broth (it's vegan!). This stuff tastes better than any other broth I've used before. It's quite flavorful.

Then I filled up the rest of the pot with carrots, celery, red onion, black beans, corn, spinach, zucchini, fresh cilantro, garlic, tomatoes, red pepper, mushrooms. I think that's everything.

Then I simmered it until the vegetables seemed almost done, added some quinoa, then turned it off 10 minutes later. So great!

Last Night's, Last Night

Last night I met up with Hannah and Jodi to see the last night of Hedwig and the Angry Inch at The Legacy Theater. It was a super duper awesome, amazing, emotional, moving and passionate performance. I laughed, I cried, I danced.

Yeah, we took a variety of photos and they all were bad. But so good. We loved it.

Since it was the last night and sold out online, but there were some last minute seats available, Hannah and I got there early. An hour and twenty-five minutes early. We were the first ones there and we waited a while before anyone else showed up.

We were able to get a bird's eye view in a row of seats built along one wall above everyone else. I was mesmerized by the variety of chairs for the audience. Plus, we were seated backstage for the theater's main stage. Super cool!

I only took one photo during the performance and thankfully I didn't use flash. Hannah totally got called out by Hedwig herself.

Amazing show tonight! Moved me to tears...more than once.

True Story

Damn right, I do.

Hannah and I were working together and she said, "Hey, do you smell fresh cut flowers?"

I replied, "I farted." We giggled about it and then a couple minutes later she handed me this.

Racing and Reading

Sometimes I'm amazed at how little I actually know about certain things. My dad and brother know what seems to be like, everything there is to know about how cars work, and I picked up absolutely none of this. But I appreciate car stuff, so sometimes my guy friends ask me along to car things. This week I was lucky to be invited by Wade to tour Tim Wilkerson's race shop (300 mph nitro funny car!).

Most of the time I didn't know what I was looking at or what Tim was talking about, but it was cool. I learned what the clutch assembly from hell looks like.

Even cooler, I got to see what's inside the back of a race semi. I'd never been inside a double-decker where race cars were on top and a full workshop was on bottom. It was super bad ass.

It takes a lot of organization and planning to have a successful race team. Without it, they wouldn't be prepared to overcome obstacles and move forward.

Clearly some of the finer points of the tour are lost upon my ignorance, but I'm thankful to be part of this Springfield Milers event. I especially had fun at the dinner and their acts of generosity were not lost on me. Their raffle to benefit Kids Cafe is an idea I will duplicate someday.

I ran into a friend of a friend within 20 minutes of my arrival at work and she gifted me a book.

Not one ORANGE contains the letter A

At first glance I fell in love with the 21st of June. It's the first day of summer for crying out loud and stuff. But you know what happens on the 21st of December? Days grow longer.

And it's awesome.

Probably everyone at 39.8017° N latitude knows what I'm talking about.

In other news, my dad totally won Color Raffle at Bingo.
My dad won!

And he split his winnings with me. Or as he put it, "I won. And I had to split the pot with some lady who also won." (He went over and congratulated her, introduced himself, asked her name, shook her hand. It was awesome. My dad rocks. You guys have no idea. My parents are awesome. So is my brother. My whole family really.) "Then I split my winnings with you, because that's the deal. Then I go home and split the rest with your mom. Yep. I won."
